We start our rogan josh by browning the beef with whole spices, then add our signature blend of Kashmiri red chilies that give the dish its gorgeous crimson colour without overwhelming heat. Slow-cooked with fresh garlic, caramelised onions, and ripe tomatoes, the meat becomes incredibly tender while the sauce develops layers of smoky, earthy flavour.
